String Bean Salad


  • 2 lbs of string fresh string beans (trimmed)
  • 1/2 a red onion (diced)
  • 1 cup of fresh feta cheese (crumbled)
  • 2/3 cup of your favorite balsamic vinaigrette dressing
  • 1/2 a cup of dill weed (chopped)



  • Boil beans in water for approximately 10 minutes (until tender)
  • Drain and rinse beans with cold water
  • Place beans in a large bowl and add ingredients
This dish is a true summertime favorite of mine and is good either hot or cold. It's also the perfect dish to bring to a gathering, such as a 4th of July picnic!

What is a bushel? I thought a bushel was a very huge quantity (like a big basketfull).

You know, I think you're right! I just looked up the word online. What I meant by "bushel" was just a few 'branches' of dill weed tied up together like they sell at my local grocery store in the fresh herb section. I have no idea how much one of them weighs though! I'm bad at chopping, so I use a mini food processor to cut through the dill weed. I would say once the dill has been cut, it amounts to about 1/2 a cup?
