
My mom and Jimmo were kind enough to bring us some extra asparagus they had yesterday, so I decided that today I would put it to use by trying a new recipe. I found this one on All Recipes. I can't tell you if it tastes good since I'm allergic to eggs, but I can tell you that it looks good and that it was easy and fun to make.

In fact, it was so easy and so fun to make that afterwards I decided to make my own variation of the recipe...using a bag of frozen spinach and some crumbled goat cheese (I'm also sure that feta or herb feta crumbles would be equally delicious, but I didn't have those on hand....I'm also thinking of adding some artichoke hearts next time around).
