Freezer Recipes: Quesadillas with Goat Cheese and Asparagus




Ingredients

12 Flour Tortillas
1 Large Log of Goat Cheese
1 Bunch of Fresh Cilantro
1 Bunch of Fresh Asparagus
2 Tablespoons of Butter
2 Cups of Chicken (cubed) optional

Warm the goat cheese so it's easy to spread. Then spread goat cheese evenly over open-faced tortillas. Set aside. In a pan, melt 1 tablespoon of butter over medium heat. Chop asparagus into bite sized pieces and place in the pan with the butter until tender. Set aside. (If using chicken too, now add chicken to skillet & cook it). Layer asparagus (& chicken) pieces over the goat cheese in the tortillas, and then fold them in half. Either wrap each tortilla in foil, set in a 1 gallon freezer bag, and freeze for later OR add the other tablespoon of butter, and place each quesadilla in the pan to brown & serve immediately. Serve with sour cream and my homemade guacamole.

Looks yummy!! I'm going to try this one this week. I think I'm going to try to make 2-3 freezer meals a week for now either doubling up recipes I make for dinner or using the some of your recipes. I making my shopping list now. Wish me luck!! :)
