Recipe: Warm Spinach Salad
After making one of the worst things I've ever made (the stuffed bell peppers in the crock-pot), my family was happy to enjoy what turned out to be one of the best things I've ever made - a warm spinach salad...I took the recipe from the cookbook "Saving Dinner" and varied it a bit, using real bacon instead of turkey bacon, and adding 1 cup of dried cranberries and 2 tablespoons of corn starch as a thickening agent for the dressing...
2 10 ounce packages of fresh spinach
1 lb of bacon, chopped
1 red onion, chopped
1 10 oz package of frozen corn
3/4 cup of balsamic vinegar
*2-3 tablespoons of corn starch
*1 cup of dried cranberries
6 teaspoons of sugar
1/2 cup of crumbled blue cheese
1. Make a bed of spinach on each dinner plate
2. Heat bacon in a skillet until very crisp
3. Put bacon on spinach plates
4. In the same skillet, add onion, corn, vinegar, and sugar. Then add cornstarch as a thickening agent. Stir mixture for about 5 minutes.
5. Spoon mixture over salads
6. Sprinkle blue cheese and dried cranberries over salads and serve.
