Last night we had company over and I cooked dinner for 10...

...cooking for 10 people with a nursing baby requires a lot of prep work ahead of time...
..but the result was well worth the effort...
...and then it occurred to me that I know women with families this large who do this on a daily basis...

Okay, so here's the recipe. I call it "Tuscan Pasta." I stole it from my Aunt Lise, gourmet chef extraordinaire! I can't speak in terms of measurements, because for this dish I just eye-balled everything! And not all of the ingredients in the pictures I posted were for the main dish. I also served a salad, so some of the ingredients - (some of the tomatoes, the cucumbers, and the red peppers were for the salad).
What you'll need for the main dish:
~a bushel of FRESH basil
~a bushel of FRESH parsley
~some blocks of FRESH feta cheese
~noodles (the shells are good)
~grape tomatoes (cut in halves)
~Lemon Juice (a jar of it)
~1 Lemon
~cooked shrimp (I buy a bag of tailless cooked frozen shrimp and thaw it the morning of)
STEP 1: Prep your ingredients in prep bowls while you simultaneously boil water for the pasta. Once the water comes to a boil, throw the pasta shells in the pot and boil them.
STEP 2: Prep ingredients. For chopping the fresh herbs, I prefer sticking them in a small food processor.
STEP 3: Once the pasta is boiled, strain in, and immediately stick it into a large serving bowl while the pasta is still piping hot. While the pasta is still piping hot, throw in the shrimp (which has been thawed...you might have to warm the shrimp in the microwave for a minute or two before putting it in the dish). Then mix in the fresh feta (which has been cut into small cubes) into the pasta...it's VERY important that this step is done while the pasta is still piping hot so the feta will melt a bit...YUMMY!
STEP 4: Now mix in your fresh herbs and your tomatoes...
STEP 5: Shave some lemon zest on your dish, and squirt some lemon juice on it...don't be shy with the lemon juice...this is what gives the dish its oomph!
STEP 6: Serve with a salad and some crusty bread, and voila! Enjoy this easy Tuscan pasta dish! Its fresh smell is sure to be a hit with everyone!

That looks delicious btw. I am going to give it a try minus the tomatos (not a fan)...think artichokes might make a nice replacement? Ever serve it cold? Ever serve it without the shrimp as a pasta salad?

How very observant! I didn't mention that one of our guests was only 22 months old :-) HAHA And then there was Leo and another baby, so I guess that's really 12 people...but 10 people who actually ate the food! And yes, I think artichoke hearts would make a great substitution for the tomatoes. I might even include them next time around! What a great suggestion! I was also thinking about adding some pitted kalamata olives the next time around to boost the flavor.
